SPRINGFIELD — Thousands of people across the Pioneer Valley joined together in celebrating the founding of Springfield with the Largest Pancake Table hosted by the Spirit of Springfield on May 18. With temperatures in the mid 60s, it was a comfortable setting for residents to sit down and eat plates of pancake and bacon, as well as a side of coffee and juice. Closing off part of Downtown Springfield, the Largest Pancake Breakfast included performances by the Sci-Tech Band, local vendors such as The Place 2 Be and more.
